Sweet Potato Hash
This SWEET POTATO HASH with bell peppers and onion is a staple in our house! It is a great meal prep item that you can make a large batch of and have in your fridge during the week to add to any meal. We eat it for breakfast with some runny eggs over the top, we add it to our lunch salads or eat it as a dinner side dish with our choice of protein. It is packed with flavor and the good complex cards you need to give you the appropriate long lasting energy! As usual, recipe below with a few pics for visual reference! Enjoy!

Ingredients:Β
2-3 small-medium size sweet potatoes, chopped 1 inch cubes (you can use any varietyβ¦I used Japanese and Jewell for this one)
1/2 red bell pepper, chopped 1 inch cubes
1/2 green bell pepper, chopped 1 inch cubes
1/2 red onion, chopped 1 inch cubes
1 tbsp. good quality, high-heat oil ( I use Avocado Oil)

Instructions:
Step 1: Chop Sweet Potatoes, peppers and onion into equal sizes so they cook evenly.
Step 2: Heat cast-iron skillet & high quality cooking oil, I always use Avocado oil.
Step 3: Dump all the goodies in the hot, oiled cast-iron skillet, season with salt and toss to evenly coat.
Step 4: cover with a lid to let the potatoes and veggies soften (about 5-7 minutes).
Step 5: uncover, season with pepper, cook uncovered for another 10 minutes until they begin to brown and CARAMELIZE. stirring frequently to prevent burning.
Step 6: Serve it up for as a side dish for a large group or store in an air-tight, glass container in your fridge for the week!!!
